MP3 vs AAC vs WAV: What Actually Differs
All three can hold the same audio, but they store it differently. MP3 is the oldest and most universally supported, it plays on literally everything, from a 2005 car stereo to any streaming platform. AAC is technically more efficient: at the same file size it generally sounds a little cleaner, and it's the format Apple devices default to. WAV is different in kind, not degree, it's uncompressed audio, meaning nothing is thrown away during encoding. That makes it the right choice for further editing, but the files run five to ten times larger than an MP3 of the same length.
What Bitrate Actually Means
The High, Medium, and Low quality options correspond to bitrate: 320kbps, 192kbps, and 128kbps for MP3 and AAC output. Bitrate is how much audio data is preserved per second. At 320kbps, most listeners cannot distinguish the output from the original on normal headphones. At 128kbps, music can start to sound slightly flat or lose some high-end detail, but spoken word (podcasts, interviews, voiceovers) sounds essentially identical at any of these settings, since speech simply doesn't need as much bitrate as complex music to sound clear.

Why Quality Settings Have a Ceiling
A quality setting can only preserve what's already there, it can't add detail the source never had. If the original video's audio was recorded at 128kbps (common for social media exports), choosing High quality here won't magically improve it, you'll just get an accurate copy of that same 128kbps audio in your chosen format. High quality matters most when the source audio is already good, a professionally recorded video or a high-bitrate music file, where a low output setting would actually throw away real detail that was there to keep.
